In the southern region of Veracruz, the indigenous Nahuatl community of Zongolica proudly preserves ancestral agricultural methods as well as many cultural traditions.

Ensambles is leading an ambitious project known as Tlapajti, which translates to 'healing' in Nahuatl. It symbolises the transformative power of permaculture techniques in healing and restoring the land and its ecosystems.

This project aims to facilitate the transition of small-scale producers from conventional agriculture to permaculture techniques and organic certification, in a partnership with like-minded roasters in Europe like Kaffemacher.
